A vaulted room under the inn, a few hundred bottles, and time to choose the right one, then open it.
Thursday, Friday and Saturday from 18:30, booking requiredUpstairs, the restaurant feeds the day. Downstairs, Le Caveau draws it out: darker, slower, evenings only.
Under the dining room, Le Caveau keeps the cool of old houses. Come down for a glass or sit down to eat, in a quiet room among the bottles.
No endless wine list, no noise: the owner opens the bottle, tells you where it comes from, and lets the wine finish the sentence.
A short list, chosen with care, that gives pride of place to the Valais without stopping there. Estates from Switzerland, France and further afield, with bottles we love to drink and to share.
The full list is on the slate downstairs. It changes as new wine comes in.
Prices on the list, at the table.
Le Caveau favours small estates run by real people, with a selection that travels from the Valais to the great wine regions of France. Winemakers, terroirs and bottles chosen above all for what they say in the glass.
In autumn, the house runs trips from cellar to cellar. See the late-season journal.
The late season

On Thursday, Friday and Saturday evenings, from 18:30, Le Caveau lays its table d’hôte around a theme, built around the wines rather than the other way round. The theme is announced on the restaurant’s board and on our social media. The price is announced each week on our social media. By reservation only.
Le Caveau is a room in its own right, more intimate, beneath the brasserie. Come for dinner for two, with friends or as a small group. For special occasions (birthdays, tastings, team dinners) it can also be booked privately.
